I literally had not left work yet this evening and I was getting the same old text of “What do you want for dinner?”, to which I always respond “I don’t know what do you want?”. So we continue this for a few texts and finally give up until I get home to figure out what meal will work for everyone depending on what snacks they have gourged themselves on since they got home from school.
Lunch at school is EARLY like 10:30-11:00 am so they are ready to eat off their right arms when they get home and I get it. Bad choices are made when we are hangry so we attempt to make a decision as soon as we come together. So tonight we all agreed on the cheap AND easy dinner of Chicken Nachos!
All you need is a bag of nacho tortilla chips, a package of chicken (I use the tenders they cook faster), a packet of taco seasoning, a bag of shredded cheese, salsa, and we use sour cream and chop up some tomato and onions for the top and we are ready to go!
1. Cook the chicken in a skillet turning each piece until done with some water or chicken broth whichever you prefer.
2. Add in a package of taco seasoning, I prefer the reduced sodium since we are a high blood pressure family.
3. Stir and add a little water if needed for consistency for about 5 minutes then you are ready to eat!
4. Melt your cheese on a plate of nacho chips in the microwave, add your favorite toppings then chow down.
This meal is simple and easy, fills you up and does not take long to throw together. We make chicken nachos quite often or use soft taco tortillas for the chicken mix instead of nacho chips to change it up. The chicken can be reheated again the next day if there are leftovers. We have also used leftover steak from the night before chopped up into pieces with the taco packet, or of course you can use ground beef.
There really is not much to it and they will finally stop telling you how hungry they are and you might get time for a shower, a change of clothes and some Netflix for the evening which is where I head to my happy place until I get to go to bed and start it all over again the next day.
The Chicken Nachos meal is quick and easy and seems to satisfy everyone as they can top it with their favorite toppings and make any size portion.
Now I’m off to help finish English homework, memorizing Bible verses for the week and some Science experiment data that is probably going to send me looking for a bottle of wine in my cabinet but I would not trade it for anything. These are my people and this is my home and I’ve got this. 😉
